Nutritious 100% plant-based treats that you and your family will surely love.

Thank you for visiting. As I mentioned in my previous post, I will be posting healthier recipes on my blog to fit my new lifestyle. I decided to share this one first. Aren’t they cute and pretty? How would you like to ingest something made with plant-based ingredients?
Last year around this time, I created ice cube tray treats or frozen treats. Well, I made them again and modified it a bit using the same process making the homemade ice cream. The result is amazing. These cute little treats are by far healthier because it’s refined sugar-free, non-gmo, gluten-free, and made with mostly organic ingredients. What could be better than that?
To make these gorgeous treats, you will need frozen purple pitaya (dragon fruit) slices or any fruits of your choice, frozen banana slices, organic almond milk or coconut milk, organic vegan protein powder (optional), organic cinnamon spice, 100 % organic maple syrup, organic maca powder (for energy), and organic pumpkin puree. You will also need ice cube trays. For toppings, you will need mini chocolate chips, blueberries, nuts, kiwi and pitaya or any fruits of your choice. Cut the fruits in tiny pieces; set aside.
You can make a larger batch if you want to make one flavor instead of different ones. If you decide to make pumpkin flavor, you can follow the recipe here and replace the milk with plant-based milk such as almond or coconut milk. As for the sugar, you can replace it with maple syrup or organic raw blue agave. Adjust to your taste. Don’t forget to add about 1 teaspoon of cinnamon ( or less; your choice). Add a scoop of protein powder or 1 teaspoon maca powder for energy or both. Blend in food processor or powerful blender. For pitaya mixture, add 1 frozen banana ( sliced) and about two thumb-size frozen pitaya slices (or more if you want deep pink color), almond or coconut milk about 1/4 cup to 1/2 cup* depending on how thick you want the mixture and the organic maple syrup or organic raw blue agave (if you want it sweet) in a food processor or a powerful blender. Blend until smooth. Fill the ice cube trays and add your favorite toppings; freeze overnight.
If you want different flavors or mixture, you will need to make different combination of flavors and place them in different containers. Using a small spoon, scoop a small amount from each mixture and alternately fill the ice cube tray. Add the toppings that you prefer; freeze overnight.
To remove the ice cube treats, run the warm water on the back of the tray about 3- 5 seconds. Using a small knife, run it along the edges of the frozen mixture to loosen and gently pry to completely remove. Or, you can put warm water in the sink and place the bottom of the tray in the water for 5 seconds. Flip the tray and gently tap the back of the tray to release the frozen cubes.
To serve, just place them in a small bowl or a glass. You don’t have to worry about them melting. It would be more fantastic and more delicious when they melt together because you get a smoothie with a marble effect. See below’s picture. You can place the cubes at the bottom of the glass and layer berry nicecream on top and some fruits and chocolate drizzle. Isn’t it amazing? ❤
*Note:
- You can add 1/4 almond or coconut milk in the mixture first and see if the consistency is what you prefer. If not, add another 1/4 cup and blend.
- You can purchase Pitaya or Dragon fruit at your local grocery store. I purchased mine at Wegman’s.
- Maca and Vegan Protein powder can be purchased at Wegman’s grocery store.
- Organic Raw Blue Agave can be purchased at Wal-Mart or Costco.
