Wow!  It’s been quite a while.  I appreciate those who stick with me throughout the years that I have been blogging.  For all my followers and new followers, thank you all for your unconditional support.  It’s very much appreciated.

Besides spring, fall is my other favorite season.  I just love to see colorful foliage.  Don’t you?  It’s too beautiful not to. I’m in awe of God’s love for us. It is evident through those colorful foliage. He created this season for us to enjoy. How can anyone not believe in God?  There must be a designer to all of this.  Don’t you think?  Science absolutely cannot create this; only a powerful God can.

Fall offers different crops that we can enjoy. The most popular one is pumpkin. I love pumpkins.  This inspire me to create my own salad dressing that I can also use as marinade or sauce for baking seafood and poultry.  It’s vegan, non-gmo, gluten-free, and guilt-free.  I have come to love this amazing dressing, especially this time of year.  This is super easy and oh, so delicious! It’s nutritious too.  What’s not to love? It’s what I use on my salad and my favorite snack that I will be sharing next.

My other favorite this season is Thanksgiving. We’re all living busy lives.  Sometimes, we forget to give thanks to those who made difference in our lives; small and great. This holiday is  like a pause for everyone to remind all of us who matter most in our lives and to appreciate them by sincerely saying thank you.  But, most of all, the heavenly creator, God, who made all things and blessed us with more than we deserved.  To Him be the glory, honor and praise.  He is the one who deserves all of our appreciation and gratefulness for all the blessings that He bestowed upon us all.  I hope that you get to thank Him and those around you (whom God gave) that have contributed to the blessings you now enjoy.  I hope everyone had a nice Thanksgiving.

Ingredients:

  • 1/3 cup organic or inorganic Apple cider
  • 1/4 cup freshly squeezed organic orange juice
  • 1/2 cup (not packed) solid organic pumpkin puree, leveled
  • 2 Tablespoons organic apple cider vinegar with the mother
  • 1 Tablespoon organic Blue Raw Agave
  • 1 Tablespoon freshly squeezed lemon juice or organic lemonade
  • 1 to 2 dashes of ground ginger

Combine all ingredients in a large bowl and whisk until well-combined.  Or, add all ingredients in a cruet and shake it like you mean it. 🙂  How’s that for easy!  You can use it with your salad or use it as marinade for chicken, salmon and shrimp. Refrigerate and serve.
