Hello! It’s been a while. I hope all is well with y’all. Life has been quite hectic. I also traveled about 10,000 miles back to my hometown to attend a family reunion. I took many photos using my cellphone. I also videotaped our (parents and siblings) visit with my brother at my grandparents farm when he and his in-law’s side of the family went to harvest some coconuts for us
to enjoy. Unfortunately, my phone stopped functioning and the phone company could not recover any of the pictures and videos. I was devastated to say the least. It was quite unfortunate. Although memories are best kept in my heart, I could not show you the actual pictures and videos for you to be able to relate what I am speaking about. Those pictures and videos were irreplaceable. Besides seeing my family, I was finally able to take pictures of places I long to share with you. It took me years to go back and visit and it all came to nothing. The only pictures I was able to share were the ones I posted on my Instagram. Oh, well. There is nothing I can do now.
Anyway, I just want to share what I have been up to. I don’t take that many pictures anymore since I didn’t think I would be needing them. However, I still find myself doing it from time to time. I thought I’d share some here.
If you have been following my blog and reading my posts, you know my love of Congee rice, especially when I am unwell. This was the time when I cheated hehe…My creative side decided to go against the norm congee recipe. I didn’t plan it. I just happened to have some leftover chicken barbecue and cut them up and add them on top. What a delicious change! I was actually surprised of how good it was. I am not saying it to earn your favor, but it really was a delicious combination.
So, my birthday came and went. I didn’t celebrate it, but I received flowers and I made a cake for myself 🙂 Even though I didn’t feel well at the time, I forced myself just so I could have a slice haha.. Yeah, I get that way sometimes; like a little kid. 🙂
Here’s one of my fave vegan lunches. It was so good. I love it with Asian dressing. ❤
These rice cakes with coconut are favorites in our home. My children love them. It brings back precious memories of my childhood and I wanted to share them with my children.
Last but not least, our fave breakfast muffin, Lemon Poppy seed muffins. 🙂 ❤
I love to watch one of God’s awesome creations; the sunset. This is one of the best sunsets I’ve seen since I live in VA. I didn’t use any filter.
